
Healthy, one-pan, comfort food for dinner that's easy to make does exist.
Pan roasted yumminess! During the chilled, rain soaked days of spring comfort food is what I want. It's a quick meal that can be ready in under an hour. After a long day of work, take 15 minutes to cut up the ingredients and slide them in the oven before you indulge in fluffy socks and a comfy sofa. While you rest and watch the rain, the oven warms the house and the delectable aroma makes your mouth water. Take care of yourself and indulge.

I crave the "stick to your ribs," soul warming meals on rainy, raw days. But sometimes, after enjoying my favorite comfort food, the yuck settles in. I feel bogged down, tired and bloated. There's nothing worse than paying a price for eating the foods I want. Hash is one of them. It's not fair.
The potatoes mesh with the meat in such a tasty way, my mouth waters thinking about it. Traditionally, it's made with corned beef, butter, and potatoes. This combo tastes great, but it's not a "feel great" kind of meal. Why not make it both?
Turkey Kielbasa Hash is where it's at! We deserve comfort food that makes us feel good on all levels! This meal dishes it out in aces. With 15 minutes of prep time, a sheet pan for easy clean up (I use two pans because I make it for four people, cut the recipe in half for two people and one pan. I also cover my pan in aluminum foil because I hate washing dishes), and super healthy ingredients it's not just comfort food, but quick and easy food! Did I mention the taste? It's a favorite in my household for a reason, and it's not the healthy reason!

- 2 sprays Olive oil spray
- 2 Large Potatoes (I like the Yukon Golds. You need about two cups at a 1/3-1/2 inch cube (like cubed hash browns) )
- 1 Large Sweet potato (1/2 inch cube)
- 4 Celery stalks (Sliced 1/4 inch along the stalk)
- 4 Large Carrots (Cubed)
- 1 Medium Onion (Diced)
- 2 Large Parsnips (Cubed)
- 1 Medium Zucchini or summer squash (Cubed)
- 1 lb Turkey kielbasa (Sliced in halved, 1/4 inch discs)
- 1 tsp Thyme
- 1/2 tsp Ground black pepper
- 1 tsp Oregano
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1 tsp Parsley
- 1/2 tsp Salt (If desired)
- 2 tbsp Olive oil
- Preheat oven to 400°F.
- Spray 2 large baking sheet pans with olive oil.
- Prepare vegetables and kielbasa and add to a large bowl. Make sure everything that is cubed, stays close to the same size. (Like a hash)
- Add Kielbasa slices and seasonings to the vegetable bowl, and stir well.
- Add 2 tbsps of olive oil to the veggie and kielbasa mixture and stir until olive oil coats everything.
- Split the ingredients between prepared sheet pans. Spread out the ingredients into one layer on each pan.
- Roast for 15 minutes, then take pans out of the oven to stir and flip ingredients. Then place pans back in the oven and cook for another 15 minutes, or until veggies are tender and edges are beginning to caramelize. The kielbasa slices should be slightly crispy around the edges.
- Serve with a side of ketchup, and enjoy!
The added salt is optional. I add a little to the vegetables, but keep in mind the salt from the turkey kielbasa does carry over to the rest of the meal.If hash is not caramelizing, try placing under the broiler for a minute or two. Make sure you watch the hash closely so it doesn't burn.Serving with Ketchup is optional.
