Holiday Almondine

Fresh green beans mingled with caramelized onions with a smattering of toasted almonds steals the holiday spotlight.

Course Side Dish Prep Time 10 minutes Cook Time 20 minutes Servings 4

Ingredients

  1. Add olive oil and butter to a large sauté pan and heat on medium.
  2. When butter is melted, add chopped onion and sprinkle with 1/8 tsp of salt. Cook until onions are slightly browned and soft (caramelized). If onions start to scorch or become too dry, add a little chicken or vegetable broth until moist.
  3. Once onions are caramelized add green beans to the pan. Sprinkle with garlic powder, 1/8 tsp salt and ¼ tsp pepper. Stir together.
  4. Add the remainder of the broth and bring to a gentle simmer, then cover until green beans are almost softened to desired consistency. (My kids like them al dente).
  5. Remove lid to boil off extra liquid and finish cooking.
  6. When cooked, add toasted almonds and toss together. Enjoy while it’s hot!

Notes

Turn it vegan by replacing the butter with your favorite plant based butter and using vegetable broth. My favorite green beans are Cantare Beans. They are crisp, yummy and grow well in my living pantry all year long. They make a favorite garden-to-table dish.
